Tortilleria Nixtamal tacos are made from masa, or corn dough, that’s produced on-site from nixtamal, or dried corn soaked in a lime solution and then freshly ground. More and more industrial tortillerias, here and in Mexico are bypassing this process these days. Tortilleria Nixtamal’s mission is to provide healthy, nutritious and satisfying food while evoking memories of Mexico and its traditions. Tortilleria Nixtamal ascribes to the philosophy that the purpose of the tortilla, as well as the masa used for tamales and other products, is to enhance the flavor of the food, not to merely hold the food together.

Tortilleria Nixtamal believes in preserving the healthiness of all-natural foods. We do this by hand-making our cuisine, as we do our tortillas, using only the most natural and nutritious ingredients. We maintain simplicity in our dishes so not to overwhelm the natural flavors with unnecessary toppings and sides. As a result, the healthy nixtamal products are complemented by appropriately portioned fillings (e.g. one order of 3 taco tends to yield about 300 calories), and toppings that dress the fillings in the manner you would find in Mexico.
